4 boneless, skinless chicken breasts

1 cup diced tomatoes (canned or fresh)

1 cup diced bell peppers (mix of colors for visual appeal)

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (adjust for spiciness)

Salt and pepper to taste

1 tablespoon olive oil

Chopped fresh cilantro for garnish

Optional toppings: shredded cheese, sour cream, sliced avocado, lime wedges
